Food Handling in Restaurants with the Covid-19 Pandemic: What Has Changed?

The pandemic caused by Covid-19 has changed everyone. From one moment to the next, restaurants have closed in dozens of countries and focus only on selling food by delivery. This has affected all kinds of workers, producers, cooks, and restaurant employees in general, among others. But one of the main changes it has brought is about the manipulation of food.

New Protection Measures

The Covid-19 virus has generated new protection needs. Kitchens are usually places where many cooks work together in a small space. That has changed; there must now be fewer cooks and greater social distancing.

Also, when handling food, it is essential to use different cooking utensils per person. These can no longer be shared, and it is also recommended that they be disposable. Although it may seem uncomfortable, a necessary measure now in the kitchen is the use of a mask. While hats used to be worn to prevent unintentional hair loss, the mask is now compulsory to avoid the spread of the virus to the food or to any of the containers and dishes, or to the recipients where it will be served.

Similarly, each food item must be thoroughly disinfected before it is processed. All purchased vegetables, meats, and cheeses should be thoroughly washed, and kept separate, to avoid contact between different foods and the cooks who could potentially spread the virus.

Transparency with the Client

All these measures are essential and necessary, and sometimes even mandatory. But even so, there are customers who are afraid of catching the disease even when buying a takeaway or delivery. Therefore, it is crucial to promote and publicize the measures taken to ensure greater confidence.
